2 slices thick cut bacon, sliced
5 cloves garlic, peeled
5 dried red chillies, broken
2 bay leaves
1 pound dried black-eyed peas
1 quart chicken broth low sodium
2 tomatoes, quartered
1 / 4 bunch fresh thyme, leaves removed
Kosher salt and freshly ground black pepper
Juice of 1 lemon
4 green onions, chopped
1 / 4 cup chopped fresh cilantro
Directions:
In a large saucepan over medium heat, add the bacon and make crisp. Remove the bacon on paper towel lined plate. To the same pot with bacon, garlic, chilli, bay leaves, dried peas and stir and mix. To add the chicken broth and tomatoes. Simmer over medium heat for 1 hour, until peas are tender.
Transfer of 1 to 2 cups of peas to give to a blender and puree until smooth. Place peas in the mixture to saucepan and stir to incorporate. Add the thyme and season with salt and pepper to taste. Continue to boil for 15 minutes. Place in a bowl and coat the peas with lemon juice, green onions, cilantro and bacon before serving. Bon appetite!
